Chole bhature is a watering,speciy and exotic dish from punjab
Chole bhature is a popular dish in northern areas it is combination of Chana masala and bhatura ( puri) a deep fry bread which made from maida




Chole recipe;

Soak chickpea overnight 

Ingredients;

Chickpea ;1 cup
Tomato; 2
Onion ;2
Green chilli ;4
Clove 4
Bay leaf
Cardomon 2
Cinnamon; 1 stick
Black Cardonmon ;1
Chat masala
Garam masala 
Chole masala
Red chilli powder;1 tsp
Turmeric ;1 tsp
Black papper ;1/2tsp
Cumin powder  ;1tsp
Coriander powder ;1 tsp
Ginger paste 1 tsp
Garlic paste 2 tsp

First Method;

Take a presser add 3 cups water ,soaked channa,2 tea bag , soda 1/tsp salt, cover and cook 5 whistle
Once pressure cooker released discard tea bag
Keep aside 
In a large a kadhai  heat oil 2 tsp oil add 1 bay leaf ,4 Clove, 2 Cardonmon,1 black cardomon ,1 stick Cinnamon saute in low flame until the spices turn aromatic 
Now add choped onion ,green chilli saute until it turn soft now add Ginger Garlic paste saute until it turn brown then add turmeric powder,Cumin powder  Black paper powder,Coriander powder ,salt , garam masala and amchur powder saute on low flame until it turn aromatic 

Add tomato purees saute until oil separation  now add boiled chole add water to adjust consistency 
Mix well cover and simmer for 10 min 
At last add Kasuri methi 
Now chole is ready enjoy with bhatura and onions 



Bhature 

Ingredients;

Maida ;500G

Curd; 100g

Baking soda ; 1/2 TSP
Baking powder ;1 tsp
Rava ;2tsp
Salt ; according to your taste
Sugar 1/2 tsp
Luck warm water ;as require
Oil or ghee

 Method ;

Take a bowl add Curd,2 tsp rava ,baking powder, baking soda , salt , ,oil and sugar mix  it add luckwarm water  and start  knead the  dough at least 5 min when dough is ready spread oil then cover wet clothe leave it almost 2 hours or overnight in winter


After that knead again and make balls between your palm leave balls  for 10 min 
Rolls the dough using rolling pin, roll neither too thin nor thick.

Heat the oil in deep frying pan or kadhai when oil is hot drop one bhatura and, press with the spoon to puff up.
Press gently 

flip over and fry the bhatura till golden brown all over.
then drain the poori into tissue paper to remove excess oil. fry all batura same way.
Then serve bhatura with chole onion and some pickle
